In order to add larger pistons and cylinders to your VW motor properly, the heads must be cut to fit the larger cylinders. Vintage Volks does not recomend or sell 87mm cylinders. The slip in/machine in 88mm cylinders are a good choice, but if you are going to that much trouble, why not go with 90.5mm or thick wall 92mm cylinders. They don't cost that much more and you get a much better engine when you are done.
